[Recipe] Christmas Kueh Bahulu Mini Cupcake

Ingredients:
280g eggs
50g castor sugar
200g plain flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla essence
Optional Cornflakes

Methods:
1. Adjust an oven rack to the middle position. Preheat oven to 180C.
2. Combine the plain flour, baking powder, and salt in a bowl.
3. In seperate bowl,with a hand-held mixer, beat the eggs with 1/3 of sugar A until combined and add the rest of sugar A in 2 addition untill combined and fluffy.
4. Add in vanilla essence, mixed well.
5. Reduce the speed to low and add the flour mixture in 3 addition. Mix on low speed until smooth , about 30 seconds. Use a rubber spatula to give the batter a final stir. Set aside.
6. Pour the batter into a ziplock bag. Cut a small hole at the corner of the ziplock bag and squeeze the batter into the mini paper cup evenly. Sprinkle cornflakes on top.
7. Place the cake in the oven without opening the oven door, until the golden brown on top and toothpick comes out clean, about 10 minutes.
8. Let the cake cool on the rack. Ready to serve!

*Can store in an airtight container for a few days at room temperature or for about 6 days in the refrigerator. This cake can also be frozen for a couple of months.
