[Recipe] Malaysian Sweet Potato Donut (Kueh Keria)

Ingredients:

500 gm sweet potatoes (I use Japanese Purple Sweet Potatoes) )
1/2 cup all purpose flour (sieved),plus extra for dusting
1 tsp baking powder
Pinch od Dried Shredded Coconut ( Optional )
 
Method:
  1. Peel and boiled sweet potatoes until soft tender.Mashed sweet potatoes and combine with flour and baking flour. Add in 1-2 tbsp water if it is too dry to mix.
  2. Knead the dough well ,use rolling pin to roll the dough out to 1 1/2 inch. Dusting some flour on the surface if necessary,then use donut cutter or round cookies cutter to cut the dough shape out.
  3. Prepare oil in fryer at medium heat,deep fry sweet potato rings until golden brown.
Method For Coating:
  1. Use a clean small pot to cook sugar and water till thick with low heat .Add fried sweet potato rings and keep stirring till all potato rings are well coated with sugar syrup and eventually crystallise.
  2. Sprinkle with some dried shredded coconut. Done !
