[Recipes] Chocolate Macaroon 巧克力馬卡龍








Chocolate Macaroon ( 24 single piece )
巧克力馬卡龍 24單片

Ingrdient:
材料:

Almond Powder 30g
杏仁粉……………30克

Sugar powder 40g
純糖粉……………40克

Cocoa Powder 10g
可可粉……………10克


Egg whites 33g
蛋白………………33克

Sugar Powder 40g
純糖粉……………40克


Filling:
餡:

Bitter Sweet Chocolate ( >70%) 80g
苦甜巧克力(70%或更高)80克
Whipped Cream 40g
無糖鮮奶油………40克


Methods:
做法:
1)Swift the almond ,sugar and chocolate powder in a big bowl.
 把杏仁粉,糖粉,可可粉篩在大碗裡。

2)Whisk the egg whites and add the sugar powder in 3 additons till soft peak.
蛋白分三次加糖粉,打到溼性發泡。

3) Add the powder ingredient (1) in the bowl, mix it well and smooth.
刮入裝粉類的大碗裡,一起攪拌成均勻光滑的糖糊。

4)Fill a pastry bag fitted with a 1cm plain tip with the mixture.
擠花袋裝入直徑1公分的平口擠花嘴,把糖糊填入。

5)Pipe small rounds (1.5 inches in diameter) onto baking sheets , make 24 pieces. Try to make the size consistence.
擠在烤盤布上,可擠24個。盡量大小一致。

6) Touch it with your finger, the mixture should be sticky at this moment . If not, the mixture is too dry and you might need to check if the porpotion of the ingredients are correct.
用手指輕碰,應該會黏手才對,如果不黏,糖糊就太乾。

7)Place the baking tray in the dry place like warm oven untill the surface of the mixture is not sticky when touching .
放在乾燥的地方(例如微溫的烤箱裡),直到用手輕碰不會沾黏。

8)Preheat the oven on top to 150℃.
 烤箱只開上火,預熱到150℃。

9) Place the baking tray in middle position, bake for 6-7 mins. You should be able to see the 'lacey' around the macaroon. The longer you left the macaroon in the oven the higher the 'lacey' will be. The higher the temperature the 'lacey' will be broader.
把馬卡龍放入中層,烤6~7分鐘。烤到中途應該就可以看到下圈出現蕾絲裙。時間稍久蕾絲裙會更高,烤溫稍高蕾絲裙會更外展。

10)Gentlely shift the baking try to lower position in the oven, turn to low heat at 130℃, bake for 10mins. Put a baking on top to prevent burning on the surface of macaroon.
輕輕把烤盤移到最下層,烤箱調成只開下火130℃,烤10分鐘。上層放個冷烤盤阻隔上火餘溫,可避免馬卡龍表面著色。

11) Leave it cool completely before you remove the macaroon from the baking sheet.
放涼才能取下。


Filling:
1)Chopped the chocolate tot smaller pieces.
巧克力如果是大塊的,先切碎。

2)Boil the whipped cream on low heat, add the chocolate untill melted.
 奶油以小火煮沸,加入巧克力中攪拌到融化。

3) 用同樣的擠花袋和擠花嘴把餡擠在馬卡龍上,兩片夹起来。
Fill the filling in the pastry bag and pipe in in between 2 pieces of macaroon.
