The Soup for Spring Summer
[Recipe] Cantonese Pumpkin Barley Soup
Ingredients:
1/2 Small Pumpkin
1 Carrot
4 Dried Figs
600gm Pork Cubes ( may use pork ribs )
200gm Barley
1.8 L Water
Methods:
- Peel and cut the pumpkin and carrot into 3cm cubes. Cut open the fig into 2.
- Boiled a pot of water, add in the pork. Cooked for 30 second and take out. Rinse off the grease on the pork.
- Add in pumpkin, carrot, dried figs, barley and water into a clean soup pot. Boiled it using high heat, add in the pork when the soup is boiling.
- Boiled it for 1 hour using low heat.
- May add in pinch of salt to taste. Done!
